The amazing folks at Nordic Ware have offered to giveaway one of their beautiful Jubilee bundt pans to a reader of Brooklyn Homemaker. Nordic Ware invented the bundt pan, and I use their heavy duty cast aluminum line of pans for all of my bundt baking adventures.

Not to toot my own horn, but I’ve been around the bundt baking block, and I have to say their pans are the absolute best! Their cast aluminum line is sturdy and heavy enough to bake really evenly, and I’ve never had any trouble with dry edges or over (or under) cooking in spots. Even though some of their bundt pans are very intricately designed, my cakes have always come out without a hitch, thanks to their excellent non-stick coating (along with a healthy coating of butter or cooking spray).

The swirled diamond shape of the Jubilee bundt pan was inspired by the diamond jubilee, and the resulting pan has a gorgeous beauty that’s both modern and classic. Just to be sure that you fully comprehend the stunning good looks of this pan, I’m going to fill this post with my favorite photos of cakes I’ve baked in the Jubilee. The diamond shapes aren’t just there for looks either! They create little pockets in your cakes that collect soaks, glazes, and icings; resulting in cakes that are just as moist and delicious as they are beautiful!

I’ve had a chance to use these knives myself, and I have to tell you that they’re amazing. They’re super super sharp and haven’t dulled one iota despite the abuse I put them through in my kitchen. Here are the basics, from their website:

WHY CERAMIC?

ceramic knife is a knife made out of very hard and tough ceramic, often zirconium dioxide (ZrO2); also known as zirconia. These knives are usually produced by dry pressing zirconia powder and firing them through solid-state sintering. The resultant blade is sharpened by grinding the edges with a diamond-dust-coated grinding wheel. Zirconia is 8.5 on the Mohs scale of mineral hardness, compared to 7.5 to 8 for hardened steel and 10 for diamond. This very hard edge rarely needs sharpening.

WHAT IS ZIRCONIA?

Zirconia is technically a laboratory manufactured diamond and thats what our knives are, thats why they are so sharp! We even give them a final heat treatment that makes them even stronger than other ceramic knives on the market, hence the dark color.

ANY SPECIAL CARE OR INSTRUCTIONS?

Just follow the following and your knives will last a lifetime:
– Never use them on any kind of bones or frozen stuff. Remember our knives are super sharp and strong but not unbreakable.
– Hand wash them. Don’t put them in the dishwasher. Remember that ceramic doesn’t absorb any taste or smell so just use a wet sponge to clean them.
– Don’t forget to put their cover sheet even if they are in the drying rack.
– Be careful to not drop them on a hard surface. And always use your ceramic knife with a plastic or wooden cutting board.

I have a few favorites when it comes to the flavors they offer, and one of them is definitely their lavender bitters. One of my favorite ways to use them is to add some complexity to a vodka lemonade. It’s total heaven, especially on a lazy sunny day. It’s perfectly light and summery, with just enough lavender flavor to add depth to the lemonade without overpowering the drink or making it taste perfume-y.  Seriously delicious.

Spiked Lavender Lemonade

  • Servings: 2 cocktails
  • Print
12 oz lemonade (recipe below)
4 oz vodka
4 dashes Scrappy’s lavender bitters
sliced lemon wedges

In a cocktail shaker, combine lemonade, vodka, & lavender bitters. Shake well and pour over ice in a large glass.
Garnish with lemon slices if desired.

Homemade Lemonade
makes about 6 1/2 cups of lemonade

3/4 cups of sugar
5 cups of water, divided
1 cup of lemon juice

In a small saucepan make a simple syrup by bringing sugar and 1 cup of water to a boil, stirring frequently. Once all sugar is dissolved, remove from heat and let cool. In a pitcher, combine remaining water, lemon juice, and cooled simple syrup; and stir until well mixed.

With the recipes for their current flavors perfected, they were excited to tell me about a few new ideas they have on the horizon. Right now they’re working to develop a kit for bitters enthusiasts to make their own bitters at home! Their kit will include a custom machined funnel and strainer set, along with two flavor blends and four tincture bottles to make your very own citrus and aromatic bitters. You’ll be able to make traditional bitters with their ready-to-use blends, or you could put your own twist on things by experimenting with other spirits or adding your own ingredients. Along with cocktail recipes, their website includes ideas for ribs, roast chicken, even whipped cream flavored with their bitters. I decided to try out a recipe they gave me during my visit for one of my favorite cocktails, the classic Old Fashioned. Their recipe uses both flavors of Hella Bitter, working together in perfect harmony. It may have had something to do with the limited-edition small-batch bourbon I received as a birthday gift, but holy wow. This is one left me speechless.

Hella Bitter Old Fashioned

  • Servings: 1 cocktail
  • Print
recipe from Hella Bitter.

2oz Rye Whiskey
2 Dashes Hella Bitter Citrus
2 Dashes Hella Bitter Aromatic
1 sugar cube or 1 tsp sugar
Orange twist for garnish

In a rocks glass, combine sugar and bitters. Mash up. Add whiskey. Add ice to top off whiskey and gently stir until ice has softened slightly or the cocktail is very cold. This can take 10-30 seconds depending on the size and texture of your ice. Stir in orange twist.

(I used bourbon because that’s what I had in the house, and I added some Luxardo cherries because I’m fancy like that.)
