Can you believe that summer is almost here?

Warm sunny days put me in the mood for light meals filled with fresh vegetables, bright flavors, & spice and heat.

On a recent sunny day, I sent Russell to the store to grab me some chicken thighs for what’s turned out to be my favorite meal of the summer so far, my grilled lemon herb chicken thighs. I know that it’s not officially summer just yet, but soon the mosquitos and humidity will make our little yarden a lot less fun, so we’re taking advantage as much as possible right now. Anyway, he accidentally came back with skinless boneless thighs and had to turn back for something that would hold up a little better on the grill.

Not one to waste anything, especially anything edible, I decided to put those skinless boneless thighs to good use a day or two later. I went through the fridge and cupboards to see what I could come up with, and quickly had a plan hatching. I had a can of coconut milk in the house, along with some carrots, limes, and ginger; so I knew what I had to do.

These chicken thighs would lend themselves perfectly to a quick and easy Thai curry. I even had half a jar of Thai green curry paste and a bottle of fish sauce in the fridge, and a bright green basil plant growing out back. All I would need to grab from the store was some red bell peppers and a bag of white rice.

This dish comes together really quickly once you get everything prepped and ready to go. I think it’s nice to chop all the vegetables into long thin strips so they cook really quickly. Even the chicken thighs get sliced into thin strips for quick cooking. Once you get the chicken and the vegetables cut, the lime zested and juiced, and the ginger grated; this meal comes together in about half an hour. If you put the rice on to cook while the curry thickens, you’ll be ready to go in no time. The only thing I wouldn’t do too far in advance is slice the basil, which starts to brown once it’s cut.

This dish is perfect for warm weather. It’s bright, tangy and just a tiny bit sweet from the lime juice, with some nice subtle spice from the curry and ginger. The chicken is perfectly tender and flavorful, the veggies add freshness and bite, and the coconut milk brings the whole thing together giving the curry some rich creaminess while keeping it light and bright. Great now I’m drooling. Good thing there’s some leftovers in the fridge!

Thai Coconut Green Curry Chicken Thighs

  • Servings: about 4 to 6-ish
  • Print
1 lb boneless skinless chicken thighs, cut into bite sized strips or chunks
1 tablespoon fish sauce
3 tablespoons Thai green curry paste
1 tablespoon coconut oil or vegetable oil
salt to taste
1 14 oz can coconut milk
1 tablespoon of freshly grated ginger (from a 1″ by 2″ peeled chunk)
zest and juice of 1 lime
3 large carrots, cut into thin strips
2 red bell peppers, cut into thin strips
1 medium onions, cut into thin strips
generous handful basil leaves, washed

In a small bowl combine chicken, fish sauce, and green curry. Stir to coat. Preheat a skillet over medium high heat, add oil and spread chicken thighs in an even layer. Season with salt to taste, and cook for 5 minutes stirring infrequently. Add coconut milk, lime zest and juice, and grated ginger. Stir to combine, and bring to a simmer. Simmer for 10 minutes, add the carrots, peppers and onion, and simmer 10 minutes more. Meanwhile, cut the basil into a chiffonade (stack the leaves, roll them up like a cigar, and cut into paper thin strips). Add about 3/4 of the basil and simmer 5 minutes more.

Serve over white rice and top with remaining basil.

I have a few favorites when it comes to the flavors they offer, and one of them is definitely their lavender bitters. Spiked Lavender Lemonade

  • Servings: 2 cocktails
  • Print
12 oz lemonade (recipe below)
4 oz vodka
4 dashes Scrappy’s lavender bitters
sliced lemon wedges

In a cocktail shaker, combine lemonade, vodka, & lavender bitters. Shake well and pour over ice in a large glass.
Garnish with lemon slices if desired.

Homemade Lemonade
makes about 6 1/2 cups of lemonade

3/4 cups of sugar
5 cups of water, divided
1 cup of lemon juice

In a small saucepan make a simple syrup by bringing sugar and 1 cup of water to a boil, stirring frequently. Once all sugar is dissolved, remove from heat and let cool. In a pitcher, combine remaining water, lemon juice, and cooled simple syrup; and stir until well mixed.

Last week I talked a bit about the history of bitters; what they are, where they come from, how they’re made, and how they’re used.

Today I’d like to go into some specifics about a few of the different styles and how you can use them at home. There really is no end to what you can do with bitters, but I thought it might be helpful to give you a few basic ideas.

Aromatic:

The best known and most frequently used style is still the old standard “aromatic” bitters. This is what most bartenders reach for when creating many of the old school craft cocktails popular today. Everything old is new again, amiright?

The most iconic maker of aromatic bitters is, of course, Angostura. Before the bitters renaissance, if you found any bitters at all behind your local bar, odds are these were the ones. Angostura bitters were named for the Venezuelan city where they were created, but they’ve since moved production to the Caribbean. They’re actually not made from the bark of the Angostura tree, and since the recipe is a tightly guarded secret, no one knows for sure if they ever were.

Perhaps the second most popular producer of aromatic bitters is Peychaud’s, which were originally developed by pharmacist and Creole immigrant Antoine Amédée Peychaud in New Orleans. His family would dispense his curative bitters in Cognac from his pharmacy in the French Quarter, and it wasn’t long before people started asking for Peychaud’s bitters by name at bars throughout the city. Today Peychaud’s are synonymous with the Sazerac cocktail, named for a now defunct brand of cognac, Sazerac de Forge et Fils, that used to make up the Peychaud’s toddy. When phylloxera almost wiped out France’s wine and brandy production cognac was replaced by rye whiskey, which remains the main ingredient in the Sazerac cocktail today.

Each brand of aromatic bitters has their own proprietary blend of ingredients, but they all share a similar flavor profile. For the most part, true to their historic roots, aromatic bitters have a slightly medicinal flavor which, in small doses, pairs really well with a variety of libations and cocktails. Most get their flavor from an infusion of bitter roots, especially gentian root; a blend of warm spices like cinnamon, cardamom, or cloves; and a proprietary mix of herbs and other botanicals such as tamarind, wormwood, or barks. Peychauds has a slightly sweeter flavor than Angostura with hints of anise and licorice, while some other brands have a stronger herbal presence.  If you’re looking to try something new, look for aromatic bitters by Hella Bitters, Scrappy’s, or Fee Brothers.

Aromatic bitters can be used in any number of applications from whiskey drinks to champagne cocktails. They’re the key ingredient in many classic cocktails like the Manhattan and old fashioned.

Orange:

The next most popular style is orange bitters, which primarily get their flavor from the dried zest of bitter-oranges. Orange bitters have been popular as far back as the 1800s. One fact that I found really interesting in my research is that they used to be very popular for flavoring dry martinis. In the 1800s a dry martini referred to the type, not the amount, of vermouth used, and the recipe was usually a half and half mix of vermouth and vodka or gin with some bitters to taste.

Depending on the brand, the flavor of orange bitters can range from dry and aromatic to sweet and fruity. Seville bitter oranges are the most commonly used, but to get a sweeter flavor Fee Brothers uses West Indian orange, the same variety used to make triple sec and curaçao. Traditionally orange bitters feature a healthy dose of spice too. Common ingredients used both in the 19th-century and today include gentian root, cinnamon, cloves, cardamom, ginger, caraway, or coriander.

Generally, Fee Brothers is considered the sweetest and fruitiest, and the least complex; while Regan’s are zesty fresh and bright, with hints of pepper and honey and a mild spice background; and Angostura Orange has the strongest orangey scent and flavor, but still with a bit of spice in the background. If you want to experiment further, be sure to try Scrappy’s orange, Bittercube’s orange or whiskey barrel aged blood orange, or Fee’s gin barrel aged orange.

Personally I think citrus bitters are a great option if you’re looking for something that goes with everything. Orange are the most common, but you can mix most citrus flavors with almost any alcohol and come up with a great tasting and enjoyable cocktail.

Other Citrus Bitters:

Beyond the traditional orange, there are tons of other citrus varieties to choose from. Hella Bitter’s citrus uses 9 varieties of citrus, and adds spice to give them a traditional “orange bitters” feeling. Lemon bitters are almost as versatile as orange and pair well with whiskey and vodka alike. Fee Brother’s has a lemon variety, and Brooklyn Hemispherical makes both lemon and meyer lemon options.
Grapefruit bitters are a great option if you’re looking to expand your collection, and they pair especially well with tequila drinks. Check out these choices from Scrappy’sBittermens, or Fee Brothers.
Bittercube’s Jamaican #2 is a warm and tangy blend of grapefuit, hibiscus, & island spice, and one of my coworker swears it’s the best way to dress up cheap beer.
Another great citrus option that would pair well with tequila, vodka or gin would be Scrappy’s lime.

Fruit Bitters:

The fun doesn’t have to stop with citrus flavors either. There are fruity bitters out there for every taste. Cherry bitters by Fee Brothers, Cherry Bark Vanilla by Bittercube, or Spiced Cherry by Woodford Reserve would all be great with bourbon, mixed in a rum and coke, or even on their own with soda water.  In the fall try Bar Keep’s apple bitters, or Brooklyn Hemispherical’s apple cider bitters. Also look for plumpeach, or rhubarb by Fee Brothers.

Herbal or floral bitters:

If you’re looking for something a little more delicate, a great option would be some of the single note floral or herbal flavors. Fee brother’s makes a mint flavor that would be great if you don’t feel like muddling fresh mint for your juleps or mojitos. Bar Keep and Scrappy’s both make lavender flavors that are heaven in a vodka lemonade. Bittermens makes a citrus and chamomile flavor they call their Boston Bittahs

Spicy Bitters:

If you like a drink with a bit of kick then look for some of the hot and spicy bitters out there. Brooklyn Hemispherical’s Sriracha & Bittermens hellfire habanero shrub would add considerable heat to a bloody mary, or would be great with tequila cocktails like a margarita or paloma. If you’d like to add another layer of flavor with your heat consider Memphis bbq bitters, Thai Bitters, Or Moroccan Bitters by The Bitter End.

Warm Spices and Baking Flavors:

If you like the idea of warm spice but don’t necessarily want the HEAT of a spicy bitter, try something in this category. Bittercube’s Jamaican #1 has allspice, ginger, & black pepper and is ideal with rum. Their blackstrap molasses bitters are excellent in hot cocktails and pair well with rum or whiskey. Fee Brother’s black walnut bitters or Scrappys cardamom bitters would both add a hint of autumnal warm to whiskey cocktails, and would be great in a spiked hot cider. Bittermens Xocolatl mole bitters contains cacao, cinnamon, and spices and is perfect with aged tequila, rum or bourbon, and would add a hint of warm spice to a spiked hot chocolate. Fee Brother’s Aztec chocolate, and Scrappy’s chocolate bitters have a purer cocoa flavor and would be perfect in a white russian.

Celery Bitters:

If Caesars or Bloody Marys are more your style, or if you want an unexpected addition to a gin and tonic, try celery bitters by Fee Brothers or Scrappys. Bittermens also makes a celery shrub that blends the flavors of celery with apples and vinegar, almost like a pickled celery that would, again, be perfect for bloody marys.

 

This is just a small sampling of the huge variety of bitters available today, with just a few ideas on how to put them to use. Once you find a flavor you like go ahead and experiment trying them in new ways.  Many people even use bitters for cooking and baking, not just cocktails. The possibilities are only as limited as your imagination.

Exactly one year ago today I married my best friend.

Like so many modern Americans, Russell and I actually found each other through internet dating. In 2009, we turned to OkCupid and went on our first date in November. We were immediately inseparable and were planning our wedding color scheme within weeks.

In 2011 I started planning the proposal, and at midnight on New Year’s eve I popped the question. As a special surprise, I reached out to Russell’s favorite artist and asked her if she’d be willing to make us a custom save the date.

When we were first engaged, I was working in event planning at AIDS Walk New York, so I tried to take advantage of my experience to plan and organize our wedding. We gave ourselves 17 months to plan, prepare, and save; and we tried to DIY as many of the elements as possible.

We knew we wanted to have a big wedding with lots of friends and family, but we also wanted it to be a relaxed & informal event. When it came time to choose a venue, we immediately ruled out Brooklyn because, well, because we’re not independently wealthy. As we started thinking about different regions in New York, the Hudson Valley quickly moved to the top of the list. No matter where we chose, most of our guests would have to travel, and we thought that the Hudson Valley would be easy to get to even if it was a short drive from the city.

We found some venues in our budget, piled into a rental car with Doris, and drove upstate. After seeing a few places that looked great online but didn’t measure up to our expectations, we powered on to our last stop. When we got there we just knew. Not five minutes into the tour we were stealing glances at each other and nodding in agreement behind the wedding coordinator’s back. The place was a breathtaking estate with gorgeous sprawling lawns overlooking the Hudson river and the Catskill Mountains beyond. So, that was that. We were gonna get hitched in the great outdoors at the Clermont State Historic Site in Germantown, NY.

With the venue chosen, we asked my good friend Alix Sorrell to design our invitations and programs, and we were on our way.

We started making decisions left and right, buying up string lights and chalkboards, hunting for shoes and rings, and looking into vendors and caterers.

I was already completely addicted to Pinterest, but planning my wedding put me into overdrive. My wedding board quickly grew to over 500 pins, and it became a place I would store all sorts of design ideas and links to cheap supplies and DIY projects. I don’t think I could ever have made our wedding as beautiful as it was without all the inspiration I found on Pinterest.

I also used spreadsheets on google drive, like, A LOT. I made spreadsheets to organize our guest list, budget tracker, supply checklist, to do list, vendor contact info, project lists, etc., etc., etc. If you’re trying to plan and organize your own wedding without a professional planner, spreadsheets are sooo helpful. I would never have been able to keep track of everything without them, and I’m certain we would have doubled our budget if I hadn’t been so anal about it.

Speaking of sticking to a budget, some of the best advice I received came from a book called, A Practical Wedding. “F*ck ‘em if they don’t like chairs.” Those words really helped me to get over my anxiety about things we thought were expected of us but we simply couldn’t afford. We prioritized the things we thought would be important and memorable, and skimped on the things that we didn’t care so much about, like the chairs. Rather than gilded wooden chairs we opted for the white plastic folding variety, and I really don’t think anyone even noticed.

Russell’s Aunt Mimi officiated the wedding, and our wedding party was full of our sisters, their children and our best girlfriends. Even Doris joined in on the fun and walked down the aisle with the flower girls. (this was before Betty joined our family)

We came on the scene to the sound of The Cure’s, “To the Sky”, and had a gorgeous, moving ceremony with the river and mountains right behind us. Our photographer, Jordan of Jordan Jankun Photography did such a beautiful job capturing our wedding along with all the beautiful scenery. All (or most) of the photos in this post were taken by Jordan, and I couldn’t be more grateful.

It was important to us that our wedding party would feel comfortable and confident, so we asked them to choose their own dresses. Our wedding colors were grey with hints of green and white, so we just asked that they choose dresses in a shade of grey with green and white accessories. This way everyone was able to find something flattering that reflected their personality rather than feeling forced into an ill-fitting uniform.

Even my mom wore grey! She was a total rock star throughout the whole process, and spent countless hours wrapping bottles with ribbon, decorating baskets and a wagon for the flower girls, organizing comfort baskets for the bathrooms, transporting truckloads of decorations and beer and mixers, and helping to make sure every last detail was perfect on our big day.

Much like the grooms maids, the flower girls chose their own dresses, these in a pretty shade of mint green.

The day before the wedding we got to Clermont just after Columbia Tent Rental finished setting up our big white tent and laying our dance floor. The rest of the setup was up to us. With our wedding party and some family and friends, we spent the rest of the day setting up tables and chairs, hanging strings of lights and paper lanterns, setting tables with white cloths and grey paper runners, topping them with candles and rolled napkins, organizing the bar, decorating the buffet and cake table, finding homes for chalkboard menus, and pinning escort cards to the cork board.

We didn’t even think to take this into consideration when planning our date, but the 17-year East Coast cicada was out during the time of our wedding. They weren’t really a nuisance, but they were definitely present and added a natural “hum” to the soundtrack of our day. All the kids at the wedding had so much fun with them!

The morning of the wedding we went to the farmers market in Kingston, NY with our maids of honor to pick out flowers. We’d been in touch with a vendor called The River Garden beforehand to ask what they thought would be in season, and to let them know we’d probably clean them out. We chose a selection of purple phlox, green wheat and barley, and purple chive flowers. Along with some amazing and generous volunteers, we arranged the flowers in antique glass bottles and recycled wine bottles, many of which were used as table markers, with white house number stickers on them. Everything was so beautiful, and we couldn’t believe how affordable they were. They even had pre-arranged bouquets of yellow columbine and purple sweet pea that we just wrapped in floral tape and ribbon for our girls to carry down the aisle.

The DIY didn’t stop at the decor either. I also made my own slow baked apple butter using Hudson Valley apples to give to our guests as a thank you for making the trip.

We chose the 1st of June as our date thinking that the weather would be mild and pleasant, but instead it ended up being over 90 degrees that day, so after our ceremony we both changed into shorts to be more comfortable throughout the day.

We really wanted people to feel relaxed and have fun, so booze was something we didn’t want to skimp on. Some of our family told us to cut corners by not serving alcohol, or just serving wine and beer, but we weren’t budging. The one thing we did do to save money was buy our own alcohol and have the caterer provide bartenders.  We also chose to offer only vodka and bourbon rather than a full bar, along with two signature cocktails served in drink dispensers, wines from the finger lakes region, and a selection of beers.

Food is kind of a big deal to us, as you can probably imagine since I write a blog on the subject. We weighed several options when we started thinking about what we’d want to serve, but we knew that we didn’t want the same old “fish or chicken” wedding food. At first we were thinking about going for a Southern picnic menu, with cold fried chicken and sweet tea, but ultimately we decided on barbecue. Our budget sort of pushed us in this direction because whole hog barbecue is usually a cheaper option, but what we ended up with was much more than just a pig roast. We found an amazing family run restaurant called Hickory BBQ Smokehouse a short drive from our venue, and after one meal there we were ready to sign the contract.

When choosing a wedding cake, we wanted to keep it simple. We went for an elegant (and delicious) 4-tiered swiss dot patterned cake with classic white Swiss meringue buttercream. The cake itself was vanilla cake with chocolate mousse and chocolate cake with vanilla mousse. Then, to gussy up the dessert table and offer some variety, we served some pies (homemade by our caterers mother!) and a selection of cookies.

Russell chose most of the music for the day with our DJ, Russell’s good friend Cody, but he let me help choose “Islands in the Stream” with Dolly Parton and Kenny Rogers as our first dance.

Words cannot express, and photos cannot do justice to, what a beautiful, perfect, wonderful day our wedding was. We’re so glad that we were able to share it with so many of our friends and family.

Thank you everyone who helped make our wedding day the most beautiful and special day of our lives. Friends and family alike joined in to help make sure every last detail was perfect.
